- PREHEAT oven to 350°F. Next, liberally spray a 9 x 13 pan with non-stick cooking spray.
- To Make Dulce De Leche:
- POUR sweetened condensed milk into a 2-quart glass measuring cup. Cook on 50% power (medium) 4 minutes, stirring briskly every 2 minutes until smooth. Cook on 30% power (medium-low) for 20 to 26 minutes or until very thick and caramel-colored. Make sure you’re stirring briskly every 4 minutes during the first 16 minutes and every 2 minutes for the last 4 to 10 minutes. Also, make sure to use potholders when removing the glass measuring cup from the microwave, as it will be hot.
- MIX in a large bowl, brownie mix, oil and egg until well blended. Fold in ½ cup pepitas, then pour the batter into a prepared pan. Add spoonful’s of dulce de leche over batter mix before placing in the oven.
- COMBINE for 20-25 minutes, or until a toothpick inserted into the mixture comes out clean. Next, remove from the oven, carefully place remaining ¼ cup dulce de leche over warm brownies and carefully spread.
- SPRINKLE with remaining ½ cup pepitas and allow to cool completely before serving.
